Whole pieces of durian pulp, dried until they crush between the fingers rather than bend. A piece dissolves on contact instead of needing to be chewed, and the creamy, custard-like weight of fresh durian reads immediately rather than arriving as an aftertaste.
No heat, and nothing added
The fruit goes into the vessel already frozen and the ice leaves as vapour under vacuum. Because nothing is cooked, nothing has to be compensated for afterwards: the line is produced without preservatives, and it sits on an ambient shelf rather than in a freezer cabinet.
