What survives is the structure: colour stays vivid, aroma stays sharp, and the piece keeps its shape while turning light and brittle. That structure is the whole reason to specify freeze-dried rather than hot-air drying, and it is the equipment that produces it, not the recipe.
Freeze-dried is dry and brittle: it snaps, dissolves on the tongue and grinds to powder, which suits cereal toppers, inclusions and premium snack packs.
