Which Vietnamese fruit is best freeze-dried?

It depends on what the line has to do. Durian is the premium line and the one China demand pulls hardest. Mango is our flagship, with the widest fit across snacking, cereal and bakery. Dragon fruit is bought for colour. Strawberry is the general-purpose line for cereal and confectionery. Mangosteen is the rarest of the six — very few suppliers run it. The Vietnam fruit mix puts variety into a single SKU.

The Method

Frozen first, then dried under vacuum.

Freeze-drying starts with fruit already frozen solid and pulls the ice off as vapour under vacuum. The water leaves without ever going back to liquid, so the cell walls hold instead of collapsing the way they do under heat. What survives is the structure: colour stays vivid, aroma stays sharp, and the piece keeps its shape while turning light and brittle. That structure is the whole reason to specify freeze-dried rather than hot-air drying, and it is the equipment that produces it, not the recipe.

Freeze-dried or soft-dried?

Freeze-dried is dry and brittle: it snaps, dissolves on the tongue and grinds to powder, which suits cereal toppers, inclusions and premium snack packs. Soft-dried keeps moisture and stays chewy, which suits everyday snacking and baking. KHAMACO runs both, in the same two factories, under the same certifications.
