Mango grown in Khanh Hoa, cut into slices and taken through one long, low drying run. There is not much else to it — the whole line rests on how far that run is taken and where it is stopped.
It folds, it does not snap
Slices of selected tree-ripened Vietnamese mango, dried until the flesh bends rather than breaks. The run holds the fruit's own sweetness, and the finished slice carries an intense mango flavour.
One drying step and nothing after it
A specialised drying process does all of the work. There is no coating stage, no seasoning stage and no second pass. That is exactly why this line is the one the chilli and the chocolate versions are built on — they take this slice and add a finish to it.
Chewy where the others are crisp or frozen
Freeze-drying the same fruit leaves it light and brittle. Freezing it leaves the water where it is. This one sits between them: dry enough to sell off a shelf, soft enough to chop into a dough or scatter over a bowl straight from the bag.
