The Line

One fruit, two answers about colour.

Red and white dragon fruit go through the same dryer and come out with the same chew. The reason a buyer takes one over the other is rarely the flavour — it is what the slice does to the colour of everything it is mixed into.

The piece

Round slices, seeds left in

Cut across the fruit and dried gently until the slice bends instead of snapping. The black seeds stay where they were in the flesh, which is what keeps a piece recognisable as dragon fruit once it is out of the pack.

The method

Colour without dye

The pink of the red line is betalain, the pigment already sitting in the flesh, and nothing is added to hold it there. Drying stays slow on both lines so the piece finishes soft and pliable rather than hard.

Against the freeze-dried slice

Chewy here, crisp there

Dragon fruit runs through both of our processes. Soft-dried gives a pliable slice for snacking and blending; freeze-dried gives a light, crisp one for toppers and ingredient work. The same fruit, two pieces that behave nothing alike.

The choice is about colour, not sweetness.

Both are gently sweet with a clean finish. What separates them is what happens to the mix around them.

Red — brings colour in

A strong pink that comes out of the fruit rather than out of a bottle, sold as the visual element in a snack mix, a dessert or a health range. This is the slice to specify when the blend needs a colour of its own.

White — leaves colour alone

White flesh blends into a recipe without altering its colour, and that is the whole reason to take it over the red. Mild, cleanly sweet, consistently tender, and easy to build into a product that already has a look of its own.

Where the two declarations differ

The no-added-sugar, no-preservative, no-artificial-colour wording belongs to the white line. The red line is described by its pigment instead, so its declaration is confirmed with the recipe rather than carried over from the white one.
